Where the Chefs Come From
The proverb settles it: 食在广州,厨出凤城 — eat in Guangzhou, but the chefs come from Fengcheng, Shunde's old name. Shunde is a district of Foshan, a UNESCO Creative City of Gastronomy (2014), and 45–60 minutes from Guangzhou. Its economy was built on the mulberry-dyke fish-pond system, so the cooking is fish-obsessed and technique-obsessed in a way city Cantonese is not — double-skin milk, stir-fried milk and Chen Village rice noodles were all invented here. Bourdain and A Bite of China both filmed heavily here, which is why it is on the international radar at all. Budget ¥80–120 per person for meals and about 15,000 steps.
One day in Shunde, walked and eaten
Get there — three ways, all easy
Metro: Guangzhou South (Line 7) → Beijiao Park → Foshan Line 3 → Daliang Zhonglou, Exit E. Intercity rail: 广珠城际 from Guangzhou South, ¥20–30. Either runs 45–60 minutes. The GBA intercity lines board like a metro — no advance ticket, QR at the gate.
Qinghui Garden — ¥15, and the only sightseeing you need
A Ming-founded Lingnan classical garden in 大良 Daliang, the historic centre. Ponds, screens, carved wood, and mercifully few people. ¥15 (~$2). An hour is enough — this is a food trip with a garden in it, not the reverse.
Huagai Road — the dessert core
The pedestrian street where Shunde's sweet reputation lives. 仁信老铺 Renxin for 双皮奶 double-skin milk with a genuinely thick cream layer — this is the original article, not the Guangzhou copy. Then 细妹 Ximei for beef offal, which queues daily and deserves to.
Jinbang Shangjie — the technical stuff
欢记 for buffalo milk sheets and 凤城鱼皮, fish skin shredded fine and dressed cold. If you order one showpiece today make it 炒牛奶, stir-fried milk — buffalo milk, egg white and crab, cooked to a set in a wok, and one of the hardest things in Chinese cookery to get right.
Shunde Fisherman's Wharf
About 20 minutes by taxi (~¥25). Riverside, restored warehouses, and the setting for an early dinner if you have the appetite left. This is where the fish comes in.

Free entry; the Shunde Eye ferris wheel and weekend fireworks. A soft landing before the train back, and the last metro north leaves comfortably late.
What Shunde invented, and what to order
鱼生 — Shunde raw fish, tissue-thin freshwater slices tossed at the table with salt, peanut oil, ginger, garlic chips, shallot, lemon leaf and taro crisps. It is the district's signature and its most argued-about dish. Freshwater parasite risk is real and Chinese sources say so openly; if that matters to you, and it reasonably might, skip it — everything else here is cooked.
凤城酿鲮鱼 is the technical peak: the dace is de-boned through the mouth, the flesh scraped out, seasoned, and stuffed back into the intact skin so it re-emerges looking like a whole fish. 均安蒸猪 is a whole steamed pig, served at scale. 陈村粉 are the rice noodles from Chencun. 牛乳 are salt-brined buffalo-milk wafers sometimes called Eastern cheese. 桑拿鱼, sauna fish, is steamed over a boiling pot at the table.

Shunde is the one day trip where a guide genuinely earns the fee — the good shops have no English, the dishes need explaining, and the ordering is where visitors lose the day.

One day covers Daliang and the desserts. Two covers Ronggui's river-fish houses and Jun'an's steamed pig, which are the meals people actually travel for. Rooms here run well below Guangzhou's, and the last intercity train north is late enough that an overnight is a choice rather than a necessity.

Locals eat it regularly and the good houses source carefully, but it is a real risk rather than a theoretical one. Everything else in Shunde is cooked, and skipping 鱼生 costs you very little of the day.
How much does a day in Shunde cost?
Around ¥150–250 all in: ¥40–60 return on the intercity train or metro, ¥15 for Qinghui Garden, and ¥80–120 per person on food across two or three sittings. It is cheaper than a day inside Guangzhou and eats considerably better.
