Wealth sent home, and the bandits who noticed
The story is the reason to go. From the mid-1800s, men from this corner of Guangdong left for California, British Columbia, Australia and Southeast Asia — the railroads, the gold fields, the laundries and restaurants of the Chinatowns that still carry their surnames. They sent money home. By the 1920s the countryside around Kaiping was conspicuously rich, poorly policed and full of bandits.
So the returning families built fortresses that looked like the buildings they had seen abroad: multi-storey, iron-shuttered, gun-slitted, with roof pavilions borrowed from European postcards and pattern books. A defensive tower with Corinthian columns and a Baroque gable, standing in a paddy field, is not a folly — it is a security decision expressed in the architectural vocabulary of wherever the family's money came from.
Which makes this the physical archive of the diaspora that produced the Chinese food of the Western world. If the argument for Guangzhou is that it is the source of the Chinese culture the West half-knows, Kaiping is the clearest single piece of evidence.

Getting there: HSR from Guangzhou South to Kaiping South (about an hour), then about 40 minutes by car — the villages are rural and spread out. Bus is ¥40–50 and slower. A private car for the day runs ¥400–600 and is the option most visitors end up preferring, because local transport between the villages is the weak link.

This is the one day trip from Guangzhou where a car genuinely changes the day. The villages are 10–20km apart across farmland with thin public transport, and the free inter-village shuttles run to their own timetable rather than yours.
