Guangzhou has 112 Michelin-listed restaurants (2025 edition): 3 two-stars, 18 one-stars, 45 Bib Gourmand, 46 Selected — and zero three-stars for seven consecutive years, which is a genuine local grievance. The list that matters to a traveller is the Bib Gourmand: 45 entries, most of them ¥15–60 street-level shops. Locals, meanwhile, weight Black Pearl 黑珍珠 above Michelin for Chinese food, because its panel is domestic and its criteria reward banquet formats Michelin systematically undervalues — Guangzhou has 18 Black Pearl listings and exactly one three-diamond. And there is a third list nobody outside China writes about: the city government's own star rating, partly scored by AI analysis of Douyin and Xiaohongshu sentiment.

The Bib Gourmand list is the one to eat from

Forty-five restaurants, most of them ¥15–60 a head, chosen for value. This is where Guangzhou's reputation actually lives.

The names worth writing down: 容意发牛杂 on 诗书路 — the beef-offal benchmark, scissors-snipped tripe and daikon in 柱侯 master stock, ¥15–30. 达扬原味炖品 on 文明路 — coconut double-boiled soups, open to midnight. 老西关濑粉, also 文明路, featured in A Bite of China. 啫八 Zhe Ba, the sizzling clay pot specialist. 大鸽饭, the pigeon house, ¥200–300pp and worth it. 香港庙街煲仔饭 for claypot rice, 文记壹心鸡 for poached chicken, 向群饭店, 同记鸡粥粉面, 南园酒家.

New in the 2025 edition: 松苑 Song Yuan, 七寸飝×大头辉 for soups, 周门 Zhou Men for hand-made noodles, and 咏作 Yong Zuo for Teochew congee.

The 2025 edition was released 2 July 2025; Guangzhou was Michelin's second mainland city after Shanghai, from 2018. A 2026 edition is likely out by now and could not be verified at build time — treat this as the last confirmed edition rather than the current one. All three 2025 special awards went to post-1990s professionals, including CHōWA's Louis Tam (b. 1993), who also took Young Chef.

The local guide

Black Pearl 黑珍珠, and why locals trust it more

Run by Meituan/Dianping, published every January, rated in diamonds rather than stars. Chinese diners weight it above Michelin for Chinese cuisine for a defensible reason: the panel is domestic, and the criteria reward the Cantonese banquet room — a format Michelin has never quite known how to score.

The 2026 edition lists 263 restaurants across 32 cities; Guangzhou has 18, down from 19. Three diamond: 玉堂春暖 Jade River at the White Swan — the city's only one, and the subject of our most contested page. Two diamond: 岭南厅 Lingnan House (Rosewood), 宏图府 Howard's Gourmet, 玥 Yue. The two new 2026 Guangzhou entries are 拾贰·懷石 Shier Omakase (Japanese) and 赏鲜悦木 (Chaoshan beef hotpot) — and the fact that Guangzhou's newest diamonds are Japanese and Chaoshan rather than Cantonese is itself the story.

Where the two guides diverge is the interesting part: Black Pearl rewards hotel Cantonese banquet rooms and Chaoshan; Michelin rewards Western- and Japanese-influenced fine dining. Read both and the real map of the city appears between them.

The third list

必吃榜 and the government's AI-scored stars

必吃榜, Dianping's Must-Eat List, is what an ordinary Guangzhou twenty-something actually consults. Its 2025 editorial direction was explicitly 烟火气 — street-level, decade-old, cooked-to-order neighbourhood shops over glossy new venues — and Guangzhou contributed 57 of them. Named winners: 辉记盐焗鸡 in Nansha (lychee-wood charcoal salt-baked chicken; footfall doubled after listing), 西关明记粥品 (est. 1981, holds prices under ¥20), and 德润牛庄.

Then there is 「食在广州」, the municipal star rating, which nobody outside China writes about. The city government runs its own restaurant programme — the third batch, released 15 October 2025, brought it to 110 star-rated restaurants with 58 added. The methodology is the remarkable part: five-dimensional scoring that uses AI analysis of consumer sentiment scraped from Douyin and Xiaohongshu, cross-referenced against food-safety records and 12315 complaint-hotline data. A municipal government grading restaurants partly on their short-video reviews is a 2025-native phenomenon, and it is entirely uncovered in English.

How many Michelin restaurants does Guangzhou have?

112 in the 2025 edition: 3 two-stars, 18 one-stars, 45 Bib Gourmand and 46 Selected. There has never been a three-star in Guangzhou — seven consecutive editions without one, which local chefs and diners regard as a standing insult to the city with the deepest Cantonese cooking tradition on earth.

Why does Guangzhou have no three-Michelin-star restaurants?

Nobody official will say, but the widely-held local view is that Michelin's criteria — plating, wine programme, service choreography — map poorly onto the Cantonese banquet room, where the value sits in ingredient sourcing, wok technique and soup-making. It is precisely the gap Black Pearl was created to fill, and Black Pearl does award Guangzhou its diamonds.

What is Black Pearl and is it better than Michelin?
